Cashew-Coconut Waffles

2 C water

2 t. vanilla

½ C. raw Cashews

2 C. quick oatmeal

1 t. salt

½ C. raw shredded coconut


Blend the cashews and about ½ cup of water till smooth.  Then add the rest of the water, salt, and vanilla and blend again.  (Note: add water slowly.) To this mixture, add the oatmeal and coconut.  Let stand in covered bowl for 4-8 hours. (I make the night before and let stand in fridge.  Add water the next morning to right consistency.) May be baked immediately, but tastes better if it stands.  Bake in greased waffle iron until steaming stops. Takes quite a while to bake—at least 10 minutes.
