Coconut Cool Whip
1 can high fat coconut milk— (fat content should be at least 13% so it sets up. Brands that have worked:
Sprouts coconut cream/Thai organic coconut milk).
2 Tbsp pure maple syrup
1 tsp vanilla
Pinch of salt
Place coconut milk in the fridge for at least 24 hrs. When it sets up, one side is solid and the other is liquid.
Open both ends. The liquid end, pour off the liquid and use for smoothies. Take the solid portion out and place
in the blender adding maple syrup and vanilla followed by a pinch of salt. Depending on how well the coconut
milk sets up, some of the liquid will need to be added back in. Place in good blender and barely blend
until mixed well and creamy adding only enough liquid back in to make it blend. If you over blend, it
will begin to get lumps. Once this has been in the fridge overnight, it usually sets up slightly more.
I always double this recipe.
