Lemon Chia Seed Dressing

Add this salad dressing rich in omega-3 fatty acids to your favorite salad, and you will get two sources of ALA: Chia seeds and flax oil.

 

Yield: ½ cup

3 Tablespoons fresh lemon juice

2 Tablespoons extra-virgin olive oil

2 Tablespoons flax oil or additional olive oil

1 tsp maple syrup or honey

1 garlic clove, minced or pressed

¼ tsp salt

1 ¾ tsp chia seeds, divided

 

  • Process lemon juice, olive oil, flax oil, maple syrup, garlic, salt, and ¼ tsp chia seeds in a blender until smooth.
  • Pour into jar or container
  • Stir in remaining 1 ½ tsp chia seeds
  • Cover and refrigerate up to 2 wks.
