Pineapple Cream Millet Pudding

1 C Millet

4 C pineapple juice

1/2 C. water

2/3 C raw cashews

1/2 tsp lemon extract

1 tsp salt

4 Tb lemon Juice

1/3 C honey

1   20 oz can of pineapple, crushed or chunk, NOT drained

1 Tb vanilla extract

 

Directions:  Simmer millet, water, pineapple in a covered sauce pan on low heat until well cooked, usually 1 hour.

Stir occasionally

When cooked, add remaining ingredients to pan, stirring well.

Blend, 2 cups at a time, until thoroughly creamy.

Pour into parfait glasses. layered with fruit and granola or Grape Nuts, or in a casserole dish.

Chill until set, usually several hours.
