Raw Vegan Taco Meat

 

10 minutes:  Serves 6 people

2 C carrots

½ C pumpkin seeds

½ C sunflower seeds

¼ C onion

1 garlic clove

1 Tbsp lemon juice

1 Tbsp chili powder

½ tsp paprika

½ tsp cumin seed

Sea salt to taste

 

Optional items:

¼ Cup sun dried tomatoes, soaked

1 tsp cayenne pepper or red pepper flakes

1-2 Tbsp nutritional yeast

2-3 T Braggs

 

Instructions:

Roughly chop carrots

Process all the ingredients together in a food processor unit desire texture

Serve on a lettuce wrap

 

Note: Store in an airtight container in the fridge up to 1 week

Taco meat gets better with each day as flavors melt together.
