Syrian Red Lentil Soup

Syrian Red Lentil Soup

2 Tbs oil

½ tsp minced garlic

2 tsp thyme

1 tsp ground cumin

2 tsp salt

1 ½ C red lentils

6 C water

 

Heat oil in saucepan.  Add garlic and sauté about 1 minute.  Add lentils, water, thyme, cumin and salt.  

Bring to a boil, reduce heat and simmer for one hour.   This can also be cooked in a crockpot.

This recipe can be doubled.  Freeze in pint containers and have for lunches when needed.

Add less water if you want thicker soup.
