Armenian Lentil Soup
1 1/2 C. Lentils
10 cups Water
1/2 C brown rice
1 C. diced onions
2 Tb. fresh lemon juice
2 Tb. Braggs Liquid Amino
1 Tb. onion powder
1 Tb. Salt
1 Tb. Chicken-Style Seasoning
1 tsp garlic powder
1 tsp dill weed
2 tsp cumin
1 C. frozen chopped spinach
15-oz can diced tomatoes
- Place all ingredients in kettle except spinach and tomatoes. Bring to a boil, reduce heat, and simmer for 1 hour or until lentils are tinder.
- Add spinach and simmer 1 minute. Add the tomatoes just before serving. Especially good served with pocket bread and avocados.
If crock-pot is used, this process usually takes about 4 hours, but the time may vary depending on how old the lentils are. Older lentils may take up to 6 hours, while younger, fresher lentils may only need 3 1/2 to 4 hours. If crock-pot is used, do step 2 above the last half hour of crock-pot cooking.
